Each iPad Pro tablet can be differentiated by other identifiers as well, such as the Order Number, which can be located by selecting the Settings app and pressing General > About and scrolling down to what is specified as "Model" within the iOS. For example, the iPad Pro 12.9" (Wi-Fi Only - 3rd Gen) that was sold in the US in white and silver with 1 TB of storage is MTFT2LL/A.
To track down a particular iPad Pro by a variety of different identifiers, please refer to the Ultimate iLookup feature.

* The original iPad Pro and iPad Pro 2 fully support iOS 10 with the exception of the minor Raise to Wake and Ride-Booking features.
** The original iPad Pro fully supports iOS 12 with the exception of the minor Memoji and Camera Effects features. The iPad Pro 2 supports Camera Effects, but not Memoji.
+ The original iPad Pro and iPad Pro 2 fully support iOS 13 except for the Adjust Portrait Lighting and "High-Key Mono" photography features as well as modest AR features (Motion Capture and People Occlusion).
† When running iPadOS 14, the original iPad Pro models do not support Location Anchors, Spatial Audio, or On-Device Dictation. The iPad Pro 2 models do not support Spatial Audio.
†† When running iPadOS 15, these earlier iPad Pro models do not support a variety of relatively minor features.
♦ When running iPadOS 16, these iPad Pro models lack support for a significant number of features, most notably Stage Manager (with its full external display support).
• When running iPadOS 17, these iPad Pro models lack support for a variety of minor features.
Please also note that once an iPad Pro has been upgraded to a later version of the operating system, it can be difficult to "downgrade" it back to an earlier version without resorting to complicated hacks. It's always a good idea to wait for feedback from other users and a couple of "bug fix" releases before upgrading any operating system, as well.
